Spinach Pakora and Vada- with a Twist



Probably the best example of the vanishing Indian snack: by the time the cook deep fries the last batch, the rest is GONE! I have witnessed it many times, last one was right here, in this very place.

The pakoras carry a twist: the traditional ones are made dipped in chickpea flour batter, while these are made with cooked and  ground chickpeas- same dough as for kofta/ vada/ falafel....you name it.

Spices of your liking: black pepper, chili, and a hoard of other ones. Tamarind chutney: a must. At least here.
