Palak Paneer- Spinach and Homemade Cheese Fry


Back home we make our own cottage cheese ( called brinza de vaca) mainly the one based on yoghurt rather than fresh milk. The fresh milk mozzarella type cheese is also made by using rennet, but that process is more tedious and not vegetarian friendly.

In India it is common to make cheese using fresh milk and some sort of acid to help it curdle up.The cheese is called paneer and it is used in cooking curries, marinated or pickled.
One of these dishes is Palak Paneer, ie spinach and cottage cheese fried with spices and nuts, if you will.  The dish is an excellent mate for rice or chapatis, so enjoy it by giving thanks to the Mighty Cow who is so kind and generous to us!

Adelina, I'm jumping bachk in to answer your question. I don't cook withan pressure cooker, so I can't answer for sure, but I think it would not work because the soup is an infusion and I don't think the corn would have time to flavor the milk. Mary
