I had bookmarked this recipe a long time ago in an old Russian magazine, and seemed to have lost it. Sometimes the greatest discoveries happen when you clean up the piles of accumulated paper clutter- and Bingo! found it. Now it was time to refresh my metric knowledge of measurements....such a pain to go back and forth....well, it took me years to think in English terms of measurements: come on guys- let's all agree on one standard- it is about time!
Anyways, the cake turned out delicious- the Russian title said "Well Known Childhood Temptations- Grandma's Lemon Treat"...I wasn't sure lemons were that popular during our Grandmothers' time and I can hardly remember them either ... so I thought of giving up on the title, with some sort of bitterness in my heart...
For the crumb:
- 1 lemon
- 1 cup flour
- 1/2 cup sugar
- 1 egg yolk
- 10 tbsp melted butter
- 2 lemons
- 10 oz butter at room temperature
- 1 cup sugar
- pinch of salt
- 5 eggs
- 2 cups sifted flour
- 8 tbsp corn starch
- 3 tsp baking powder
- 3 tbsp confectioners sugar
- Wash the lemon and finely grate the peel. Squeeze the juice and mix everithing with flour, yolk, butter.

- Using a mixer, blend the butter and sugar till you get a creamy mass, mix in the eggs one by one.
- Separately mix the flour, baking powder and starch.
- Add the flour mix to the butter mix.
- Add the lemon juice.
- Heat the oven to 350 F, pour the batter in a 9X9 inch pan and pour in the dough.
- Evenly spread the crumb over the top and bake the cake for 35-40 min.
- Remove the cake and let it cool. Sprinkle the confectioners sugar on top and cut into squares.
- Best served fresh, with some whipped cream!
