A while ago I married my blinis to the Indian Bhaji, (see them here) and they all lived happily thereafter, but it is time for the blini to take time off and appear solo! Sometimes that does good, you know....(speaking from my own experience). Well, this particular blini was made in a hurry after a long visit to the library, when our stomachs wouldn't stop rambling- and that is what I love about it- quick to make and hunger-satisfying. For 12 blinis you need:
- 1 cup fat-free yogurt
- whole wheat flour
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 2 tablespoons flax seeds
- oil for frying
- Mix salt, sugar, flax seeds and yogurt together.
- Little by little add flour, whisking till you obtain a sour cream consistency. (you may need to add some water if you use store-bought thick yogurt- I used home made, which is thinner)
- Heat the oil in a frying pan. Take a ladle and pour little batter about 3 " diameter. Fry on one side and turn when the other side is golden brown.
